New year, new menu? Well, not quite totally new, but we do have some great additions for 2017! Lets start with breakfast, because who doesn't love breakfast...
ALL DAY BREAKFAST
SERVED ON TOASTED ZTB SOURDOUGH, MASHED AVOCADO, RED PEPPER FLAKES, SEA SALT, AND FRESH MICRO-GREENS. ADD 2 ORGANIC SOFT-BOILED EGGS (ALERT: HIGHLY ADDICTIVE TOTALLY DELICIOUS BREAKFAST ITEM).
Let us be the first to say, welcome to the Pura Vida family! We are beyond excited with this addition to our menu. It’s safe to say this Avocado Smash may be the new guy, but quickly becoming the most popular. Aside from the fact that this looks like a piece of artwork, it tastes even better, and wait… there’s a *bonus* its packed with nutritional health benefits. Make your tastebuds happy and your body happy; win-win.
Avocado is a great source of nutrients, packed with Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5, Vitamin B6, Vitamin E, magnesium, copper, iron, zinc, phosphorus, Vitamin A, the list goes on and on. Most importantly, avocados are loaded with heart-healthy MONOUNSATURATED fats, AKA the good fat. There are many beneficial effects including reducing inflammation. They are also loaded with fiber, which helps with weight loss, reducing blood sugar spikes, and aiding in promoting a lower risk to many diseases. Not only are avocados healthy, but consuming avocado actually helps you to absorb more nutrients from other plant foods that you consume. These nutrients are called “fat-soluble” meaning they need to be combined with fat in order to be absorbed/ digested. Avocado are high in antioxidants (good bye free radicals!) which helps to prevent cancer and other cell damaging effects. Bottom-line: eat more avocado!
CREAM CHEESE CUCUMBER
SERVED WITH TOASTED BAGEL, WHIPPED CREAM CHEESE, CUCUMBER SLICES, RED ONION, SEA SALT, BLACK PEPPER, AND FRESH HERBS.
Anything with cream cheese is always good but the addition of cucumber slices to our delicious toasted bagels was somewhat, dare I say, genius. The warm toasted bagel, spread with whipped cream cheese, paired with refreshing cucumber slices is the perfect mesh of crunch and cool. This concoction was inspired by our love for using natural and fresh ingredients in everything we do. You won't find this baby everywhere!
Cucumbers are actually quite nutritious. Most notably, cucumbers are known to contain -bear with me- lariciresinol, pinoresinol, and secoisolariciresinol. "What are thoseeee?" you might ask... These are 3 lingers which have a very strong history of research in connection with reducing the risk of cardiovascular disease and several other cancer types including breast, ovarian, uterine, and prostate cancers.
EGG SALAD TOAST
SERVED ON TOASTED ZTB SOURDOUGH, TOPPED WITH MAYO-LESS ORGANIC EGG SALAD (MADE WITH AVOCADO) & MICROGREENS.
This is our healthy-twist on the classic egg salad. Typically made with mayonnaise and other unhealthy fats, we opted to make ours with avocado (yes, you’re welcome) and it is even better than the original thing. We are so egg-static about this new menu item, we cannot wait until you try it for yourself! Served on a generous slice of toasted ZTB (Zak the Baker) sourdough and topped with microgreens. If you're as obsessed with our bagels as we are, substitute ZTB for a whole wheat bagel or maybe switch it up an opt for a whole wheat pita, gluten-free toast, or Ezekiel bread, too. Even better, if you're looking to cut the carbs ditch the bread and eat as-is. Whichever way you chose you'll be sure to come back for more.
